What to start germinating for a veggie/herb garden?
Since its almost Feb. I was hoping to start germinating inside some seeds to be transplanted outside once it starts to warm up. Looking for ideas of edible produce that will grow (preferable well and easy) in a northern climate (Maine/NE states..... I'm actually from Canada but these states mimic my climate).
So far my plans include lettuce, carrots, green peppers, chamomile, stevia, some type of mint.
What do you guys have in your gardens and any tips on planting times/techniques, tips/trick you may know (terracotta pots over top of seedlings, or plastic, etc.). Im a rookie farmer and would love the satisfaction of a successful harvest this year. Is it possible to grow a grain in this northern climate? something that could be made into flour? Are any of these plants complementary to each other? (like carrots and onions....they repel each others enemies)
FYI, my latitude is approx. 45 degrees North.

I respectfully have to disagree with the other posting who said that germination is harder than it seems, it is actually quite simple. There are tons of great vegetables that you can grow in your climate. A few of the ones you didn't mention that will work gret for you are: peas, beets, radish, tomatos, chard, broccoli, beans, zucchini. I realize that you have a shorter growing season than I do (here in pennsylvania) however, especially when started early all of these vegetables will work fine for you and should give you a great crop. I have actually put together a free planting guide for most of your average garden veggies, it includes: when to start indoors, when to transplant to garden, planting depth and spacing, row spacing, companion plants, how long to harvest, and preferred temps. This list comes in handy to me every year when planning and planting my garden and I think it will work for you. You mentioned grains however they can be a bit harder to grow, especially depending on how much room you have. Corn may be the easiest of the grains and I would suggest going with a corn that is a sweet
